  5. A few red chilis
  6. A handful of peas
  7. Tofu
  8. 2 cups of rice
  9. 2 eggs
  10. 1/2 tsp sesame oil
  11. A dash of soy sauce
  12. A few bunches of fresh basil
  13. 1 tsp of oyster sauce
  14. 1 tsp of brown sugar

Instructions

  1. Sauté diced carrots, garlic, ginger, long beans, white part of scallions/onion, Thai chili/red chili on high heat .
  2. Add your choice of protein (Tofu and peas), but feel free to substitute for Chicken.
  3. Add half a portion of leftover rice, and stir fry for 1 minute.
  4. In a small bowl, beat two eggs with 1/2 tsp sesame oil, 1 tsp of coconut aminos (I use Organikahealth) or you may use low sodium soy sauce.
  5. Move aside the rice to one side and pour the egg mix onto the other side of the wok. Swirl it around, let cool. Once 60% done, mix with the rice.
  6. Add the remaining rice, with sauce and continue tossing until everything is combined.
  7. Turn off the head, add fresh basil and mix until wilted.
